Boeterkoek (Dutch Butter Cake)

Equipment

  • 1 round cake pan

Ingredients
  

  • 1 Cup 2 sticks of Butter
  • 1 Cup Sugar
  • 2 Eggs reserved some for the top
  • 2 Cups of Sifted Flour
  • 1 ½ Teaspoon Almond Extract we like Watkins pure almond. It is very strong
  • Almond slivers Approximately ¼ cup

Instructions
 

  • Directions:
  • Preheat oven to 325 degrees F.
  • With a pastry blender, combine butter with flour. Until it looks like a shaggy dough resembling peas.
  • Add sugar, eggs & almond extract
  • Press firmly into a round cake pan. Do not grease.
  • Brush remaining egg yolk on top of cake.
  • Top with slivered almonds.
  • Bake in oven for 30 minutes or until lightly brown around edges.
  • Let cool and slice.
