Boeterkoek (Dutch Butter Cake)

Ingredients
  

  • 1 Cup 2 sticks of Butter
  • 1 Cup Sugar
  • 2 Eggs reserved some for the top
  • 2 Cups of Sifted Flour
  • 1 ½ Teaspoon Almond Extract we like Watkins pure almond. It is very strong
  • Almond slivers Approximately ¼ cup

Equipment

  • 1 round cake pan

Method
 

  1. Directions:
  2. Preheat oven to 325 degrees F.
  3. With a pastry blender, combine butter with flour. Until it looks like a shaggy dough resembling peas.
  4. Add sugar, eggs & almond extract
  5. Press firmly into a round cake pan. Do not grease.
  6. Brush remaining egg yolk on top of cake.
  7. Top with slivered almonds.
  8. Bake in oven for 30 minutes or until lightly brown around edges.
  9. Let cool and slice.
