BEAN SPROUT SALAD
2 medium tomatoes, cut in wedges
1 cucumber, skin scored and thinly sliced
1 avocado, pared and sliced
2 to 3 cups beans sprouts
Salad greens
1/2 c. salad oil
2 tbsp. lemon juice
2 tbsp. vinegar
3/4 tsp. salt
1/8 tsp. sugar
1/2 tsp. dry mustard
3 strips bacon, diced
1/8 tsp. pepper
Combine tomato wedges, cucumber, avocado and bean sprouts in salad bowl.
Garnish edges of bowl with salad greens.
Just before serving, mix oil, lemon juice, vinegar, salt, sugar, dry mustard, and pepper; pour over salad and sprinkle with bacon.
