Baked Macaroni and Cottage Cheese

This recipe is originally from 1943.  It is from “The Modern Family Cook Book” by Meta Given.    I have taken the original recipe and  modernized it for todays generation.   I added garlic and also sautéed the onions.   I also added Italian seasonings and of course no pasta recipe is complete without shredded cheese!    The original recipe can be found below.

Baked Macaroni And Cottage Cheese – Modernized and video version

Ingredients:

  • 1 cup macaroni
  • 3 tablespoons butter
  • 6 tablespoons flour
  • 1 large tin tomatoes
  • 1 teaspoon salt
  • 1 onion, finely chopped
  • 3 gloves garlic
  • 1 Tablespoon olive oil or butter for sautéing
  • ½ teaspoon Italian seasoning
  • 1 egg, beaten
  • 1 ½ cup cottage cheese
  • pepper to taste
  • 2 cups shredded mozzarella or Parmesan cheese
  • 1 cup buttered bread crumbs (1 cup dry bread crumbs mixed with 1 tablespoon melted butter)

Directions:

  1. Drop macaroni into 2 or 3 quarts of rapidly boiling salted water, and cook until tender. Then drain hot water and turn into buttered casserole dish.
  2. Meanwhile in a frying pan, sauté onions and garlic in olive oil until the onions are cooked and translucent.
  3. Push onion and garlic over to one side of the pan. Then melt butter and blend in flour; cook over low heat until mixture is brown. Then combine with everything in the pan.
  4. Remove from heat and stir in remaining ingredients, except bread crumbs or grated cheese.
  5. Pour over macaroni, stirring slightly to distribute.
  6. Sprinkle with cheese.
  7. Sprinkle with buttered bread crumbs
  8. Bake in a 350 degree Fahrenheit oven for 45 minutes.
  9. Serve immediately.
