Peanut Butter Cup Cheesecake

Ingredients
  

  • 1 pkg 8oz Cream Cheese
  • 1 can sweetened condensed milk
  • cup lemon juice
  • ½ cup peanut butter
  • 1 teaspoon vanilla
  • 9 peanut butter cups chopped
  • 1 baked 9 inch graham cracker / chocolate cookie wafer crust
  • Mini peanut butter cups

Method
 

  1. Allow cream cheese to soften at room temperature, and whip until light and fluffy with sweetened condensed milk. Beat until well blended. Add lemon juice, peanut butter and vanilla, blend well. Fold in by hand the chopped peanut butter cups. Add filling to the crust and spread evenly. Garnish the top with mini peanut butter cups. Chill for about 2 hours.
